- 1–2 potatoes, diced (for a heartier texture)

Instructions
Step 1: Sear the Beef
- Heat 2 tbsp olive oil in a large pot over medium-high heat.
- Add beef pieces, season with salt and black pepper, and sear for 4-5 minutes, flipping occasionally until browned on all sides.
- Remove beef and set aside.
Step 2: Sauté the Vegetables
- In the same pot, add onions, carrots, and celery. Sauté for 3-4 minutes until softened.
- Stir in garlic and tomato paste, cooking for 1 minute.
Step 3: Simmer the Soup
- Return the seared beef to the pot.
- Add beef broth, bay leaves, and thyme.
- Bring to a boil, then reduce heat to low. Cover and simmer for 45 minutes.
Step 4: Add the Barley
- Stir in barley and continue simmering for 30 minutes, or until barley is tender.
- Taste and adjust salt and pepper as needed.
- Remove bay leaves before serving.
Final Touch: Garnish with fresh parsley and serve with crusty bread for a complete meal!
