Instructions

Step 1: Sear the Beef

  1. Heat 2 tbsp olive oil in a large pot over medium-high heat.
  2. Add beef pieces, season with salt and black pepper, and sear for 4-5 minutes, flipping occasionally until browned on all sides.
  3. Remove beef and set aside.

Step 2: Sauté the Vegetables

  1. In the same pot, add onions, carrots, and celery. Sauté for 3-4 minutes until softened.
  2. Stir in garlic and tomato paste, cooking for 1 minute.

Step 3: Simmer the Soup

  1. Return the seared beef to the pot.
  2. Add beef broth, bay leaves, and thyme.
  3. Bring to a boil, then reduce heat to low. Cover and simmer for 45 minutes.

Step 4: Add the Barley

  1. Stir in barley and continue simmering for 30 minutes, or until barley is tender.
